The Calendula Restaurant puts the Ayurvedic dietary philosophy into practice: each dish is tailored to the guest’s individual constitution and digestion. Our meals are prepared from fresh, seasonal ingredients, preferably sourced from organic farming.
According to Ayurveda, nutrition is not only about nourishing the body, but also a key to restoring balance. At the Calendula Restaurant, we create menus that take into account each guest’s dosha type, digestive fire (agni), and current condition.
Our vegetarian dishes are not only delicious and nourishing, but also support detoxification, strengthen the immune system, and promote mental clarity. Dining with us is a mindful ritual that complements the treatments and supports the healing process.
The Calendula Restaurant is ideal for those participating in an Ayurvedic program, as well as for anyone seeking a truly mindful dining experience.
For 30 years, we have been providing healing nutrition for our patients. Since the establishment of our clinic, we have introduced various dietary systems and approaches, including macrobiotic diets, elimination diets, and calorie counting. At the same time, the Ayurvedic concept has helped clarify what personalized nutrition truly means. Together, our doctors and chefs have developed a general vegetarian diet that aligns with European eating habits, as well as climatic and seasonal conditions, and is balanced for all constitutions.
According to Ayurvedic science, everyone has their own body type (dosha), which can change depending on the seasons, wind, or illnesses. Based on this understanding, we began preparing Ayurvedic meals for our patients.
Ayurveda attaches great importance to quality and freshness, to the feelings and emotions of the cook, and to the eye-catching presentation that we ourselves keep in mind.
Many of our patients visit the clinic with the goal of weight loss. It is important to note that we do not count calories when designing their diet, as we understand that excess weight is actually caused by a metabolic imbalance. Therefore, we have developed a special diet that supports and stimulates metabolism, resulting in weight loss. This does not mean starvation in any way. The portions provided at the clinic are sufficiently generous even for those aiming to lose weight, which is why all of our patients experience weight reduction during their therapeutic program.
At the end of the treatment process, each of our patients receives an Ayurvedic diet tailored to their body type, along with a list of healthy, neutral, and harmful foods.
